I made the call that this corn was far enough along to transfer to the other spawn bag I'd prepared, so now it gets to join its brother. I have 6 more pint jars of bird seed that are fully colonized and well on their way to mature, so this weekend I think I'll need to prepare a couple of larger bags. Maybe 2-3 gallon size.

I'm curious about US #food #history, 1800-1975?/2010?

In particular, I want to understand why American cooking is so famously bland and limited in ingredients. Looking at some recipes from the 1700s, it seems clear that food was fairly heavily seasoned at one time.

It's a perennial curiosity - e.g., my wife and I remember that the tea selection when young was "Liptons" and some Celestial Seasonings- now any store has yards of different companies and flavors on the shelf. Same for cheese.

I didn't get a visible spore print from the portabella mushroom (it was store bought, so who knows how long ago it was picked), but I went ahead made a spore syringe from whatever residue it left and inoculated a liquid culture jar with it. A few days later, and something is growing in there. It's going to take some more time before I can tell if it's portabella mycelium, or some kind of mold/bacteria. Fingers crossed.

If it turns out to be a dud, I'll see if I can find a fresh cap at a farmer's market. In the meantime I need to sterilize some growing medium.
