It gets stranger when you learn that they gave the Vault Dweller's spouse a gender neutral name in the Fallout Bible.

Both games have been reverse engineered enough at this point though, and there's plenty of tools so that you could probably write in a Vault Dweller gender randomization mod. Some of the dialogue might be tricky to alter, especially talking heads
