Tasty! I love pickled carrots and beets. I will have to seek out cabbage and jalapeños of the pickled variety as they too sound delicious.

Wait isn't that what sauerkraut is, pickled cabbage? :) Sounds like a win! Bummer about the peppers.

the cabbage wasn't thinly shredded like kraut. the pepper heat dissipates into the other veggies and gives then a bit of a 'bite'. It is quite pleasant.
