    @Anke white pepper is hotter
    but less complex than black pepper and often used in pale dishes (eg scrambled eggs or chicken soup) to avoid black flecks.

    It's also used for its specific flavour in some dishes but mostly it's a colour thing.

    Due to being hotter use less than you would black pepper in the same dish when substituting.
