Wrote a quick script to check this out of curiosity. If I were to block mastodon.social I would lose 133 out of the 446 people I follow, and lose 94 followers.

The centralization around mastodon.social means I that I would lose connection with 30% of the people I follow. I don't think any one instance should have that much power.
