Smoked pork chops need a lot more time than they typically get during a normal BBQ. I took mine through a long journey:
1. Fried them, but they weren't well-cooked on the inside.
2. Boiled them in their own fat for a while with the lid on the frying pan.
3. Ate one, decided it still wasn't tender enough, and let the rest simmer with a lid on for a further one hour.
4. They were just about tender enough, but could have been even better after 2 hours.
