I agree that choosing a server and even the right one is not easy. Even for more technical people. Which one can I trust? Which one will be still online tomorrow? All question not easy to answer. That's why I think go-to servers like mastodon.social, matrix.org, etc are important, both for people to know what to chose without having to worry to much and for marketing purpose, even though it's against pure doctrine.
