@claudiom You could always try Adwaita again. After the recent refresh, it's quite nice and modern feeling. (It's default, of course... and has a dark variant too.)

Arc is one of the best modern feeling custom themes. (@ https://github.com/NicoHood/arc-theme & usually in most distros too)

Lastly, there's Oomox if you want a custom theme derived from a handful of supported ones, including GNOME-Colors & Shiki. (https://github.com/themix-project/oomox — available for various distros & compilation too).
