Telegram has a proprietary server and crypto which is regarded as being bad or fake. Signal has good content encryption but bad everything else. Both of those rely upon the user trusting one particular server.

It's a bleak landscape out there, often populated by people who would like good security but aren't getting it. I've heard Wire mentioned recently as a possible solution, but havn't tried it.
