I have this problem where I have a hard time not taking more work outside my day job even when I don't want to do more.
Like people ask me "Can you do this?" and I have a hard time framing in a good way "It CAN be done, but I don't WANT to do it", so I usually end up doing it.

Start charging for the work.
If you really don't want to take on the job, give them a FY price, if they will pay it it will be worth your while.

Back in the day I used to be a DJ (with actual vinyl disks) and had been asked to do a New Years Eve party. Since I had done them the past few years and wanted to be able to enjoy the night I turned it down. At the time an event like NYE would bring in about $500-$700 gross for the night to me. After many weeks of hounding and saying no I gave them a FY price of $5000. I enjoyed the night off.
