    Tepache results:

    After 3 days fermenting in the jug it was good tasting but sickly sweet. I don't really drink sweet beverages, so if you're one to guzzle colas or sweet tea you might like it just fine, but for me it was a bit much. A day conditioning in bottles got it nice and sparkling, and burned off a little more of the sugar, but it was still a little too sweet for my tastes. I refilled the jug with water and this time added 200g of sugar (vs 350 the first time) and let it go for a second run. I just bottled that, and tasted a little bit of it. Overall it's much mellower. I'll have to wait and see what it's like tomorrow after it's carbonated and chilled. I also started a second fresh batch with 200g of sugar that I added cloves to. I tasted a bit of that as well and the clove flavor definitely comes through. I'm not sure if I like it more with or without.
