I bottled my first mead. It had been almost 7 weeks, and the airlock was still bubbling sluggishly, but I wanted to free up the vessel for other projects so I just pasteurized these to stop the fermentation. There was about 12 oz left over which I drank last night. It had kind of a yeasty aftertaste, but it was pretty good. I'm looking forward to trying it after it's aged for a few more months and the yeast has finished settling out. Waiting is going to be hard.
