Open Source communities are moving to Slack because mailing lists have become a toxic environment where every other thread is about people sending HTML emails, sending top replys, or about breaking an arbitrary etiquette rule.

People just want a welcoming environment to ask questions or have friendly debates.

Slack is a horrible platform for an Open Source community, but it doesn't have the emotional baggage of a mailing list.
