Even coercion needs trust. Nobody physically forces you to work, you do it because you trust people will carry on with their threats if you don't.
But let's go back to paying for things. You don't know where the things come from, you don't know who made them, you don't know how they were made, and yet you give people an amount of material vastly inferior to the things and they accept it in exchange of the things.
On both sides of this transaction, there was a significant amount of trust for it to actually happen.
This doesn't mean we are unconditionally trusting each other for everything, just that most of our daily lives are based on a low-level foundation of trust.
