      A trick we found recently in a recipe to make oven baked breaded chicken thighs that rivals fried chicken is to mix the chicken with mayo (and seasoning), then dip in breading (we use panko).
      
      Mayo is perfect for the job. It sticks well to chicken, all the oil in it makes the chicken fry when baked. It doesn't taste like mayo, it just tastes juicy and tender.
