I'm guessing "different spam address for every service I ever use" is still least-worst accomplished by owning a domain and plus-addressing?

Need to replace my current solution for one-off email addresses. Is there a trustworthy (even paid) email fwding service for this nowadays?

Also, like 1 in 5 systems think foo+bar@baz.com is an invalid address, which makes life harder for those who want to use one-off addresses.

I've used https://www.mailinator.com/ to create one-off mailboxes, generally never to be looked at again. They offer (offered?) Atom/RSS access to mailboxes, which I sometimes used to keep track of what was getting deposited there.
