Topping:
~ 1.5 cups halved strawberries
or ~1-2 16 ounce bags frozen strawberries (thawed overnight)
1 cup sugar
Coconut whipped cream (optional)

Tom’s Non-Dairy Strawb Shortcake

Ingredients:
Shortcake for ~8-9 inch pan:
2 cups sifted flour
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
6 tablespoons shortening
~3/4 cups almond/soy milk or 2-3 ~6 ounce (strawberry-flavored?) almond/soy yogurt cups
If using almond/soy milk, you can also add ~6 tablespoons of juice from your strawberries to the shortcake batter for flavor.

I may as well post this bc I made it and may as well share it... and then stop thinking abt this recipe for a while because: Why the fuck did I decide I needed to make FOUR 2x size strawberry shortcakes for the picnic. thats too much
