If you set up a host-meta you can make the server "social.samsunginter.net" but have your address be "AT torgo AT samsunginter.net". That might be cleaner to put on business cards and marketing stuff.

My bank provides bill pay, but also "ebill" which apparently downloads the statements as well. I'm not sure how this actually works, does anyone know?

It's not clear to me how I could download my statements, just by myself without using a bank and an intermediary.

It is Open Source, so worst case if Samuel stops working on it you can run it by yourself. But right now it's really reasonably priced and you don't have to do anything.
