At intermission we switched over to the Improved Japanese Cocktail (ecch, dislike the name), our first cocktail to use orgeat. Delicious! Simple! It was a big hit. 2oz brandy, 1oz lemon juice, 1oz orgeat, three dashes Peychaud's bitters (I forgot mine at home! We subbed in Angostura); shake hard with ice until the shaker frosts, double-strain into a coupe, garnish froth with a dot of bitters & a twist of lemon or orange.
